David ByrdI didnt cook this weekend until Sunday. And deciding what was the recipe of the week was a bit difficult as a result. I made Osso Buco with roasted potatoes, cabbage and cheesy rolls. Each was delicious. The osso buco was done in what I call restaurant style. Braised with lots of vegetables and herbs, which were later strained from the sauce. The sauce is then thickened and the meat is reheated and served with a simple but very flavorful gravy. For the first time in making osso buco, I substituted an Irish stout beer for the usual red wine. It made an amazing sauce. The cheesy rolls were simply layered bread dough with parmesan and sharp cheeses. I got the idea from a roll served at a BBQ joint called Bone Daddys. They were excellent by themselves or for sopping up the osso buco sauce. However, my focus for the weekend was cabbage. I dont eat much cabbage so I wanted to make a version that smelled and tasted great. Check out the recipe of the week which is German Cabbage (okay a bit of liberty taken since I am not German but I am married to a woman of German-Russian descent). The cabbage is flavored with bacon, caraway seeds, dill, apple juice and vinegar. If you or family doesnt like cabbage, you have got to try this version. German Cabbage, the recipe of the week. Please take a moment to review the CPNI policy we provide to our VARs and customers. Even if you are not a member of our partner program, whichever service provider you sell has a variant of this policy. Be aware, be compliant and be safe.
